Hello Fall: Green Lentil & Sausage Soup

It was Fall here in Portland…for about a weekend. Really! It was cold and we had a high of only 60 degrees F and quite honestly I loved it. Now, we are back to the sunny and the 80′s nonsense but when it was nice and Fall-like, I made this soup. It was delicious!

Instead of kielbasa, I used that age-old tradition of going through the freezer, seeing what was in there, and using that. It was sweet Italian sausage (2) and some chorizo (1) the uncooked kind, so I thawed it all and browned that up first. You can also use cooked kielbasa (what the original recipe called for) or even Spanish chorizo. I am thinking about giving that a try next time.

Pretty Good Black Bean Soup

I made this the other night based on what I had in the fridge, freezer and assorted cabinets. Two cans of black beans? Check. Actually, I have five cans of black beans in the cabinet. Every time I go to the store, I can’t remember if I have black beans, so I buy another can. *sigh*

Anyway, to continue, a bag in the freezer of about 1 cup fire-roasted, diced tomatoes? Check. Jalapeno that I really need to use…? Well, you get the idea. For a things-I-need-to-use-in-the-kitchen project, it turned out really tasty!

Pretty Good Black Bean Soup
1 1/2 tsp cumin seeds
1 tbsp olive oil
3 slices Canadian bacon, diced (you can skip this, or substitute sausage, bacon, some other kind of pork product, etc…)
1 small white onion, diced
3 cloves garlic, minced
1 tsp dried oregano
1 cup fire-roasted, diced tomatoes (with juice)

Red Lentil Soup with Garam Masala Recipe

Well, it looks like it is still Winter. Make a big pot of this and snuggle under a blanket or something!

Red Lentil Soup with Garam Masala
Adapted from the Spice House
2-1/2 cups dried red lentils (about one pound)
2 medium onions, chopped fine
2 garlic cloves, minced
2 tbsp vegetable oil
1 1/2 tsp salt
2 tsp chili powder,
1 1/2 tsp coriander seed, ground
1 tsp turmeric powder
1 tsp freshly ground black pepper
1 tsp cumin seed, ground
3/4 tsp ground cinnamon
1/2 tsp cayenne chile pepper
1/4 tsp ground cardamom
1/8 tsp ground cloves
6 cups lamb or chicken stock (or vegetable broth would work too)
2 cups water
Optional garnishes: yogurt and cilantro leaves

Rinse and drain lentils in a fine mesh colander.

White Bean, Kale and Chorizo Soup

I have been craving soups lately. This was one I made a couple of weeks ago when, to my delight, I realized I had almost all the ingredients required, minus the kale. S’okay. I walked to the store and got kale!

The original recipe (from the defunct, “Cooking Live” on Food Network) called for dried beans and 3 chorizo sausages. I used canned beans and a 2:1 ratio of turkey sausage to pork chorizo. My turkey sausage was raw, so I cooked that in link form and then sliced up (to avoid the casing shrinkage). My chorizo was cooked already, so I just chopped and browned that. Then, I started the soup in all the sausage drippings. Oh yeah, I added a couple of potatoes too.

The paprika, saffron and sherry vinegar totally rock this soup (and the spices give it a very pretty color!)

Crockpot Bean & Bacon Soup

Sometimes I crock pot overnight, which is convenient, but slightly weird in that I tend to dream about food then. It is, however, much better than setting up your George Forman grill the night before to cook bacon, bed-side in the AM. Still my favorite Office episode of all time. The country crock? Nice Dwight? The van with the spray bottles? Ha!

Anyway. Soup here. Lots of beans. Add some bacon. Wine. Broth. Veggies. Cook it while you sleep and dream about beans. Or, cook it while at work and have a nice dinner waiting for you when you get home! Awesome!
