Okay, so I think I am just barely (barely!) making it in time with this week’s French Friday’s with Dorie — Spur of the Moment Vegetable Soup. I made mine with carrots, onion, sweet potato and plenty of garlic (along with the rosemary and ginger). I liked it, but kind of felt it needed…something. It was a good soup for alongside a sandwich, but not really the star of it’s own show, you know?

Red onion, carrots, sweet potato, ginger, garlic, rosemary all in the pot.
Blending in batches. It turned out quite creamy.
That’s a really neat spoon in the first picture and such a cheery color on your soup.
I agree – this soup did benefit by having having something to eat along with it. (Grilled cheese, croutons with cheese and run under the broiler, etc)

Your soup (pre-blending) is so colorful! I like your green garnish. I agree that this is a good, but needs something to with in. I made cheese quesadillas.
Mmmh… I thought about using sweet potato too, but decided to save it for this week’s tagine.
I like to make the soup party creamy and part chunky because I feel like totally creamy soups are delicious but I dont feel “full” after and its perfect to start a meal too

Although your first picture was very, very pretty, I do agree that this soup needed to be spiced up a bit. I created my own version but will add more dash and flash when I clean out my fridge next time.
