		<description>This looks like a delicious recipe.  I&#039;m going to go in the opposite direction, however, with some nice Game Hens instead of turkey.  

Think I&#039;ll split the hens in half and roast right on top of the veggies.

Oh, and smear a little bit of reserved Pancetta, Parmesan, Sage Butter during the last half hour!  MMMmmmmm!  (Good tip!)</description>

No, that&#039;s why I tried it on a chicken first. It seemed to work well for me there...and I did a half recipe. I&#039;ll probably have a 12 lb turkey, so I&#039;ll make a full recipe and brine too (I did this w/ the chicken too to make sure it wouldn&#039;t be too salty).

But, I like the idea of holding some back and re-smearing the last 1/2 hour or so! :)</description>
