Wow. We had a Mexican-themed Super Bowl party last night. This was amazing. I made this along with a chili chicken recipe, your Black Bean/Corn/Avacado salad, and delicious toppings. And trust me, people will be talking about the food for a long time! Absolutely mouth-watering.

Hi, I don't remember why I originally saved your blog in my bookmarks, but I came by today & saw this recipe & it sounds good!

The rub sounds similar to something that I use on turkey. So, for an easy dish to use your leftover rub, marinate a boneless, skinless turkey thigh (the thighs I get are about 2 1/2 #) in the rub, then put the thigh in a crockpot. I think I cook it on low to medium for about 6 hours. Half-hour or so before it is done, add a 28oz can of plum tomatoes, cut in half and some of the juice. I serve it over flat noodles.
