Pancetta, saffron and grilled shrimp too! Yum! It makes me want to make another one this season too, but then it is Portland, so quite probably there is plenty of time... I love the Spanish influence. I am really intrigued by saffron at the moment. And the roasted cauliflower sounds great. I really have to try that. And, oh yeah, I'm totally with you on the beets!
