Made a version of the potatoes last night (though I left out the nutmeg and the quarter cup of parmesan, &#039;cause I wanted that pure goat-cheese flavor to sing through) and DAMN they were good. I used 3 small-medium potatoes -- bigger than an egg, smaller than a fist -- which made two 4-oz ramekins and two 6-oz mini-pie-dishes full, with precisely the right amount of sauce.</description>

No, sorry, I&#039;ll make that more clear! I added the broth to a *new* pot while the pork cooked in the oven. I just wrote it that way for timing issues, ie: if you start the sauce when you put the pork in the oven, it should be reduced by the time you take it out. I just reread and it did sound really unclear that that&#039;s what I meant. I fixed it! Thanks for catching that and asking about it :)</description>
