I came across your blog while I was looking for a mobile, nutritious and delicious solution to breakfast. I'm thinking about making this and adding flaxseed meal to the mix--the bag says that ground flaxseed can be substituted for shortening or cooking oil at a ratio of 3 to 1 in baked goods (I would have to add 1 cup of flax meal to equal the butter). I may substitute some of that for applesauce for the moistness factor you observed. Any suggestions for ratios?

PS--I think flaxseed should be a superfood when you can't get good salmon.

What a great recipe; I'm tired of yoghurt in the morning but I don't want to eat anything too heavy. I'm guessing huckleberries will stand in nicely for the blueberries? I'll give it a go!
