		<description>I made this with a pink ladie apple, Quorn patties-as we&#039;re all vegetarians here, plenty of Parmesan, and Newmans&#039; own Ranch (being LAZY)....  and it was a HUGE hit!  the entire family loved it, Clare cleaned her plate, and Jeff keeps talking about it.... thanks for the wonderful recipe!!  :)</description>

Tania: I hear you, salads can be difficult and unappealing. It has to be pretty substantial and/or interesting salad to be good (imho) -- jwa, can eat greens and a balsamic dressing and me happy. Me? Not so much. Although I just read about your Mashed Green Olive and Ruby Grapefruit Salad and it looks amazing! I think you&#039;re on the right path! And, I really want to try that!

I also just read about a lemon chicken, bell pepper and asparagus salad in my Barefoot Contessa cookbook that sounds wonderful. I will have to try that soon too! Let&#039;s both hang in there with the salads :)
