My family is doing a Cured Ham for Thanksgiving and I'm coming up with a few different mustard sauce recipes and a version of yours will definitely be on the menu with proper accreditation. Everything sounds delicious and thanks for reminding us all that you don't have to buy the pre-made stuff when you can just make it yourself.

Pork is the meat we consume with the greatest frequency. These rubs sound wonderful. We'll definitely have to give them a try. And tamales, yum!

:) Thanks

You know, I've only cooked pork 3 times -- all documented here, but each recipe has turned out really well. I'll probably never cook with it as much as I do chicken but it's been pretty tasty!

What a feast! I don't consider myself a really big fan of pork, but by the end of your post, I was drooling. It sounds simply delicious. Perhaps I should partake of "the other white meat" more often!
