		<description>Just lovely!  I want to reach through that first photo a pluck off the top of the souffle -- it&#039;s just so delicious looking.

I happen to like it when the souffle top cracks and gets uneven -- at least for some souffles.  I think it adds visual character to the souffle.</description>

Oh, this was my 2nd attempt. First try -- not so good, I promise!

I think we&#039;ve been led to believe souffles are very hard (and some parts of making it are challenging) but, if everything is done correctly, it&#039;s not too difficult!  At least, that&#039;s what I walked away with from IMBB#20.
