Steps to a Quick & Tasty Dinner Wrap

Sometimes I get home from work and really don’t want to do much of anything in the kitchen. I love cooking and food and all that but just…no. I want to sit on the couch and zone out. Or go upstairs and read, anything but spend more than five or ten minutes making something tasty to eat.

Sometimes this leads to Annie’s Microwave Mac & Cheese and sometimes it leads to Delivered Dish. But lately, I’ve started keeping tortilla wraps and hummus on hand for nights when I am feeling lazy. Trader Joe’s spicy hummus is especially good, as is making your own. Hmmm, I should post a hummus recipe next week. I remeber making really good hummus at Christy’s house once — then I think we watched Kalifornia. Where was I? Oh yeah, the wrap.

Veggie Wrap:
Grab a tortilla (I like to use a spinach one) and put a layer of hummus down the middle. Top with whatever veggies you have on hand — some tried and true options include strips of bell pepper, onion, mushroom, and kalamata olives — but really, anything goes here. Mound the creation with mixed lettuce, sprouts, spinach, or other greens of some sort. Top off with some fresh basil. I usually sprinkle a little olive oil and balsamic on the greens as well. Add cheese — feta for a Greek theme like the one pictured above, but any kind will work. Roll up. Cut on a slant for added fanciness. Grapes are a good Summer side, a cup of soup would be a nice Fall / Winter accompaniment.

Enjoy Dinner:
1. Take plate to couch along with a Bridgeport Blue Heron Ale.
2. Put feet up.
3. Watch The Daily Show or The Gilmore Girls as you eat the tasty wrap. As you are mocked for watching The Gilmore Girls, remind the mocker that he sat and watched almost every episode with you when you got Season 1 from the library. He will argue that this was just because Lorelai is hot. Snicker to self that he knows the character’s names and yell out, “You so loooooove The Gilmore Girls. It’s your favorite show…,” as he goes upstairs.
4. Finish dinner. Think to self, “yum, that was a tasty dinner wrap.”

These also work great for lunch if you can make it in the morning before leaving. When I’ve tried making this the night before, the hummus made the wrap a tad soggy (but even so, it was still good).

  1. Holy crap, I so love this post, and not just because I’m mentioned. It’s the Gilmore Girls sotry. David and I have recently(after several months) finished all of Seasons 2 and 3 and we can barely hold our breath for season 4 which is supposed to be coming out any day. And though he gets much mocking, David OWNS them. Yes, owns. Not even netflicks…they sit around ready to be watched day and night. Though I will say since finishing it last week, we are both gave GG withdrawal. And Lorelai is hot.

  2. I still need to see Season 3 but I’ll ‘fess up that I own Season 1. 🙂
    As soon as it gets cooler in the house (on the 2nd floor) and I start doing it again, GG’s going to go into my stationary bike riding entertainment rotation, along with the Arrested Development and Scrubs dvds.

  3. Mock all you want Mockers of GG Watchers, but like MLB says, you DO know the characters and you DO think Lorelai is hot. But Rory is just a cute in her own way. Yes, withdrawl is the word. But every day I find myself asking WHY i like this show, as the acting is no more than a C+ and the dialogue tries to cram way too much in one dialogue moment. And Lorelai, please, please give your parents a small break for caring about their granddaughter. Other than that, It keeps me grounded to a smalltown Northeast lifestyle i crave daily, and the situations are fairly real. thanks MLB for keeping it alive in blogstyle. DHG.

  4. P.S. I must admit that this is exactly how got into watching GG in the first place. So this is not too jabby, i hope. I am sure hoping though, that I can find Season 1 soon, AND 4 comes out on the 27th. And in the meantime, 6th comes to air on the Sept. 13th. And dang! those wraps look good. Your dude is a lucky guy.

  5. I don’t know the Gilmore Girls from the Golden Girls, but this post had me hooked with Blue Heron and The Daily Show, right on!
    Thanks for the great alternative to mac’n’cheese or delivery. This wrap idea has a thousand possibilities.
